This recipe works well with any small to medium winter squash, such as Acorn, Carnival, Delicata, Sweet Dumpling, or Sugar Loaf. It’s so tasty it could almost be a dessert! All you need is winter squash, apricot jam and ground cinnamon.
Preheat oven to 350 degrees. Wash squash, cut in half and clean out seeds. In a glass dish, place squash face down in
a 1/2-inch of water, cover with plastic wrap and microwave for 10 minutes or more till squash is semi soft to a finger press.
Remove plastic wrap, drain water and invert squash so it’s open-side up. Place 1 to 3 spoonfuls of apricot jam in each squash depression, then dust cinnamon over the top. Place prepared squash in the oven uncovered and bake for 15
minutes to warm the jam and toast the squash.
