Have you heard of garlic whistles, or garlic “scapes”? They’re a delicious, garlicky addition to meals that you can enjoy in spring and early summer, before the year’s main garlic harvest. You can dice them finely and use them in your cooking, or try this amazing, simple recipe for roasting them.
- 1 bunch of garlic whistles or scapes
- 1 to 2 tablespoons olive oil
- Dash of dried basil leaf flakes
- Dash of black pepper
Preheat oven to 400 degrees. Wash and cut garlic scapes into 1-inch pieces; discard the flat flower-tip portion. Place in a metal roasting pan or glass baking dish one layer deep. Drizzle olive oil over garlic, and sprinkle on basil and black pepper. Toss to mix oil and herbs over garlic slices. Place in oven uncovered for about 1 hour stirring every 20-30 minutes until garlic whistles are browned and sweetly caramelized. Serve with bean dishes, lettuce salads, garnish on meats, or as a side dish to a main course.
